Preparing your own meal is not only good for you, but your bank account too. You might think that it’s time consuming, especially if you’re a mom with two kids who are always vying for your attention. Like, literally grabbing at your dress as you chop carrots in the kitchen.
Before you make instant noodles and Chinese food deliveries a staple in the food department, try out these dishes that only take 5 mins to get done.
The Good Ole Omelette in a Mug
Get a serving of salsa and an egg mixed into a ramekin. Top it up with grated cheese. Two minutes is all this baby needs in the microwave, and your meal is done!
The New Scrambled Mix with Tofu
Tofu provides you with a good portion of protein. Stir fry some tofu with cumin, paprika and turmeric powder. Season your fix with salt and pepper. Dive in.
Poached Egg with Avocado Toast
Yep, avocado toast is one of the top searches on Google. Add a poached egg to the mix and you have a balanced plate right in front of you.
Panzanella the Mediterranean Way
Up your Tuscan salad by fixing a mix of cucumber and tomato chunks, feta and olives. Get a handful of toasted croutons and a good lug of olive oil. Season and that’s it!
Leftovers the Right Way in a Chicken Burrito
Do you have some roasted chicken in the fridge? Use it in a burrito with a few slices of cheese and avocado. Get your veg into it by adding peppers and onions.

I know, it sounds like such an odd combo, but trust me on this. Your leftover rice can be reconstituted with soy sauce, sesame oil, a tablespoon of garlic, corn and yes, peas.
Brocolli Soup with Parmesan
Blanch your broccoli florets in boiling water for a couple of minutes. Blend it in your food processor with some olive oil, salt and pepper. Pour it into a bowl and sprinkle some grated parmesan over it.
