With so many cafes springing up, we often wonder where the best spots are for brunch in Singapore. When it comes to eggs, it’s amazing how this humble ingredient can be prepared in a variety of ways. You may find that eggs are a staple in many breakfast dishes, yet not all are created equal.
To satisfy your eggy cravings, we present to you the best egg dishes in Singapore. We have selected 5 particular cafes – each specializes in a particular variation of eggs that have been incorporated into their brunch dishes.
For Omelettes – Baker and Cook’s Spanish Omelette ($16 nett)
Deceivingly simple, the omelette is perhaps the most difficult egg dish to master. We were hard-pressed to find one that satisfies, until we found the Spanish Omelette at Baker & Cook.
With a creamy and fluffy texture, the eggs formed the basis of the dish. Chorizo sausages, capsicums, and onions were added to the filling to make a hearty & satisfying omelette. The sauce has a hint of chilli that provides an extra oomph.
Overall, the Spanish Omelette at Baker & Cook was well-executed, and it certainly earned our vote.

For Boiled Eggs – One Man Coffee’s Big Brekkie ($12 nett)
One Man Coffee is thus far the only cafe that we’ve come across that serves boiled eggs in this style. The kitchen at One Man Coffee has been rather consistent with their 6-minute eggs. With a hardened white and semi-runny yolk, the boiled eggs were impressive indeed.
Special mention goes to the candied bacon, which complemented the eggs very well. To round things off, the breakfast set included honey ham, toasted cherry tomatoes, baby spinach with pesto, butter mushrooms and a slice of grilled sourdough rye.
The boiled eggs at One Man Coffee proved to be a welcoming departure from the usual renditions, and it certainly gained a thumbs-up from us.

For Poached Eggs – The Plain’s Weekender Eggs ($18 nett)
Poached eggs are commonplace in many cafes, so we had a tough time deciding on which deserves this spot. After much deliberation, we chose the Weekender Eggs from The Plain, largely due to its consistency and marvellous taste.
The poached eggs were drenched in wholesome hollandaise sauce, accompanied by fresh slices of smoked salmon sitting atop multi-grain bread. To top it off, sprinkles of ikura (salmon roe) signified a creative twist to the classic eggs benedict.
What struck us most about the Weekender Eggs was its robust combination of flavours, making it an impressive dish indeed.

For Scrambled Eggs – RONIN’s Scrambled Eggs on Toast ($9 nett)
RONIN has the best-scrambled eggs in Singapore, period.
The buttery mess was creamy and smooth. It had a near-perfect balance between watery and dry, making RONIN’s scrambled eggs an absolute joy to savour. The toast came in two varieties, namely wholegrain and white. Both of which complemented the amazing scrambled eggs.
We recommend that you add-on the various sides for a fuller meal. Add-ons include lamb sausage, streaky bacon, Portobello mushroom & sliced avocado, all of which come with an additional charge.

For Baked Eggs – Artichoke’s Lamb Shakshouka ($26 nett)
The Lamb Shakshouka is a beast of a dish, thus it easily wins our vote when it comes to baked eggs.
Served in a large hot-pan casserole, the Lamb Shakshouka finds its inspiration from the Moorish tradition. It is essentially a hearty mix of baked eggs, braised lamb shoulder, kashkaval cheese, pistachio dukka, tomatoes, and topped with pita.
The baked eggs were cooked to a soft, yolky texture, allowing it to comfortably mix with the other ingredients. Special mention goes to the braised lamb, which was outstanding. Every chunk of lamb was tender and savoury, with just a slight gamey taste to boot.
We were in awe of the ecstatic mix of flavours, and the generous portion of this dish. Without a doubt, Artichoke’s Lamb Shakshouka clinches our top spot for baked eggs in Singapore.
