These explain the popularity of the steamboat culture in Malaysia and Singapore where steamboat restaurants are available galore with an abundance of soup bases to choose from.

Miso Soup Base

Miso soup is popular in Japan due to its healthy properties, low-calorie count and high protein content. It’s actually quite easy to make this at home: all you need is to buy some of the quality miso paste in the stores, add your preferred amount into hot, boiling water and keep stirring until the paste dissolves. After that, turn it off and add some seaweed when serving to make it more aromatic.
Herbal Chicken Soup Base
Herbal chicken soup is a step up from the normal clear soup that you find in standard steamboat restaurants. It is also really easy to make this: just purchase a whole free-range chicken from the market and some Chinese herbs (just ask the shopkeeper) from the grocery store, dump everything in and boil it all together for soup that’s full of flavour.
Spicy & Sour Soup Base
This next soup really gives you an appetite due to its spiciness and sourness. Bound to tingle and excite your taste buds, gather chicken or pork bones, chilli paste, cooking oil, dried chillies, ginger, shallots, garlic, vinegar, Szechuan pepper, lime juice, sugar and salt. Throw it all together in a big pot and get ready for a feast.
Pumpkin Soup Base
Creamy, golden pumpkin makes up the base of this wonderful soup and gives it body and flavour. Normally added together with rice to make a sort of pumpkin porridge, you can add some cubes of stock to add more flavour to the soup. The soup is made of pumpkin, rice, water, salt and pepper: simple, everyday ingredients.
Milky Fish Soup Base
Do you like the fish head noodle soup they serve in restaurants? Try making it at home for your steamboat instead! Get some good quality fish heads, celery, onions, carrots, tomatoes, ikan bilis and boil it all together. Add some evaporated milk at the end for the signature milky taste.
Seafood Tom Yam Soup Base
Tom Yam is practically synonymous with Thailand and is a crowd pleaser no matter where it’s eaten. Use Tom Yam paste, add other necessary ingredients such as lemongrass, mushroom, tomato, and onions. If you want it to be creamy, add evaporated milk for that extra dimension to your soup.
Kimchi Soup Base
Thanks to the K-wave, we are all quite familiar with Kimchi, that pickled cabbage from Korea. Packed with nutrients and flavour, it’s no wonder many people love to drink Kimchi soup as well. For your soup at home, just chop the Kimchi roughly, add it to some chicken stock boiling in hot water, then season with soy sauce and finely chopped coriander.
