The distinguishing feature of Pink Coconut’s nasi lemak is not just the rosy hue of the rice, but also the adorable heart-shaped fish cakes that accompany it.
It is safe to say that blue nasi lemak is obviously so yesterday.
Xiaxue’s Unexpected F&B Venture
Xiaxue’s sudden announcement of the brand is unexpected to say the least. How did she venture into the food and beverage industry?
Xiaxue has apparently always wanted to sell nasi lemak as she had a desire to share her family’s nasi lemak recipes. To turn her culinary dreams into reality, she sought advice from her friend Randall, a figure well-versed in the food industry, renowned for his involvement with BoBo Fishballs.
However, Randall offered more than just advice. He proposed to help Xiaxue establish her nasi lemak brand. With a fully-equipped factory capable of executing various culinary creations, Randall collaborated with Xiaxue and Global Cloud Business to launch a cloud kitchen for Pink Coconut.
Unlike traditional physical stores, Pink Coconut’s nasi lemak is prepared in the factory and exclusively available for delivery, so don’t expect to head to an outlet and look for Xiaxue grabbing the dishes for you.
What Pink Coconut Offers
Pink Coconut offers a diverse menu, featuring four distinct Nasi lemak sets and a delectable side dish.
The sets include Original Chicken Wings Nasi lemak, Boneless Chicken Cutlet Nasi Lemak, Prawn Paste Chicken Wings Nasi Lemak and even Beef Rendang Nasi Lemak, catering to a wide range of taste preferences.
Each nasi lemak set includes the signature fragrant pink rice, naturally colored with beets, heart-shaped fish cakes, crispy peanuts, ikan bilis, sambal chili, aromatic hae bee hiam, cucumbers, and your choice of protein.
All chicken-based nasi lemak sets are priced at $9.90, while the beef rendang set is available at $12.
To complement your meal, you can opt for the side dish, sambal petai, priced at $5.20.
This dish features a delightful fusion of chili, shrimp paste, garlic, shallots, and petai beans.
In her Instagram announcement, Xia Xue shared that she had been working alongside Global Cloud Business for months to bring Pink Coconut to life. The enticing combination of unique flavors and the appealing pink aesthetics of the nasi lemak sets certainly make Pink Coconut a standout culinary experience.
When speaking to Mothership, Xia Xue addressed the importance of responsible feedback. She urged people against leaving bad remarks for the sake of it, citing that these remarks not only affect her business, but the innocent vendors who are involved as well. She encouraged patrons to share positive feedback if they enjoyed the nasi lemak, and welcomed constructive suggestions for improvement.
Interested in trying out the nasi lemak? You can get it from various locations such as Bedok North, Lavender, Marine Parade, Bishan, Paya Lebar, Holland, Little India, Yishun and Punggol (Northshore). Just head to your favourite food delivery app and you’d see pink.
