Arh, fried bee hoon, the staple dish for many Singaporeans in the morning. It’s a dish that everyone has tried before, from the vegetarian to the Muslim, because it comes in all varieties.
With so many side dishes to choose from, it’s literally possible to have a different variety every time, but what would make it the best? These tricks to make it taste even better are not given by a fried bee hoon hawker but simply by a fried bee hoon fan.
So, are you ready to be fried?
Choose the white one instead of the dark one
You know the only difference between the white beehoon and the dark beehoon? Dark soy sauce. Usually, the white one is slightly more expensive but because it doesn’t use soy sauce as its ingredient, so a lot of other ingredients are used, adding more taste to it!
Reject curry gravy
Some hawkers would ask whether you want any curry gravy on it: reject it immediately. Fried beehoon doesn’t go well with curry since it has its own taste: just imagine having Crystal Jade fried rice with curry gravy. It just doesn’t make sense, right?
Don’t opt for vegetable
Okay, health-conscious people are going to throw rotten eggs at me, but hear me out. The taste of fried beehoon is usually sweet—adding vegetables as side dish doesn’t balance it out, but it might just make it worse, and the beehoon becomes a side dish to balance out the bitter taste instead.
If in doubt, choose a fried egg and a luncheon meat
I’ve tried many combinations, but this has always been my favourite, and also many others’ favourite.
Don’t take too much chilli sauce
It’s the same idea as curry gravy: too much chilli sauce would take the organic taste of the beehoon away. Take sparingly.
Go early
If you can, buy it earlier—dabao if needed. When the beehoon is piping hot, there is less oil. If you buy it when there’re only a few more servings left, not only would it be cold, you’ll also take all the excess oil that comes with it.
Don’t go for the fried chicken
Unlike KFC, the fried chicken in a fried beehoon stall would have been fried quite a while back and would no longer be crispy. If you’ve eaten fried stuff that has been left in room temperate for more than one hour, you’ll know how bad it tastes!
The chilli is for your sides, not your beehoon
As mentioned earlier, having chilli on your beehoon would mask the original taste of the dish. Here’s the thing: some of us often put the chilli sauce in the middle of the dish instead of on the side. Remember, since the chilli is supposed to be for your sides, it should be placed on the side!
Use the same tips for fried noodles
If you prefer fried noodles, you can use the same tips as well. But do note that the calories in fried noodles are higher than fried beehoon, so if you can, choose the beehoon instead!
